Objective

WP6 aims at demonstrating if the tool developed in WP5 is effective in providing new knowledge on the management of risks for
enhancing sustainability and business continuity. The ability of the DSS dashboard to allow for the resilience of wine supply chains will be tested on two vertically integrated wineries. All the demonstrators will be codefined with the partners involved in the project, which will act as case studies.

Methodology

Two partners from Apulia and Campania, established in areas dedicated to wine production, will participate in the project as case studies. The Apulian partner is a social winery that processes and distributes wine from grapes provided by associated vine growers, including reverse logistics. The Campanian partner is a private winery that owns vineyards and handles all stages of production and distribution. Their vertical integration facilitates data acquisition and monitoring across the entire wine supply chain.

Tasks

Task 6.1. Real data acquisition and monitoring along the entire wine supply chains of the two partners, involving the vine cultivation, wine operations, distribution and consumption and the reverse logistics flow.

Task 6.2. Testing DSS dashboard using real data acquired from the IoT-based technologies implemented within the wine supply
chain of the two partners. Before its final release, the DSS dashboard will be tested on the two different case studies to check if it
can ensure the risk and recovery management, enhancing sustainability and business continuity.
